Baked Spicy Rice

 

l cup long grain rice uncooked
2 cans Ro-Tel (canned tomatoes & peppers)
1 cup water
1 Tsp Salt
2/3 cup sliced green olives (I omit these ...)
1/4 cup vegetable oil
1/2 cup chopped onion
1 cup shredded monterey jack cheese
(I have also used cheddar and mozarella but jack cheese is best)
1 tsp chili powder
1 tsp paprica

Combine all ingredients in baking dish and cover. Bake at 350 degrees for 45 minutes Then remove cover and stir well. Bake 15 minutes more or ntil liquid is absorbed and rice is done.
